SNOW! Although it was just the smallest sprinkling in flower beds and trimming the edges of buildings on my walk in to uni this morning, I can now tick off ‘see snow in Bristol’ off the ole’ university bucket list. This week I’ve also ticked off ‘do the Students’ Union pub quiz’ – rounds on the EU and Fairtrade?! Yeah, safe to say a team of 4 female biologists didn’t do so well…

The subject of having a ‘university bucket list’ is one that comes up from time to time in my circle of biology friends. Around half of us are due to graduate this summer, and the rest will stay in Bristol to pursue MSci and MRes qualifications – so it’s a bit of a funny topic, with only 3 of us thinking in that mindset.

I don’t really know what I want to do with my life post-university. Reassuringly, most people I talk to don’t seem to either. Shall we form a club and get matching jackets? That at least would guarantee me a job 😛

Enough future talk. Let’s make muffins!

{This recipe is from Two Peas and Their Pod.}

Lemon + poppyseed muffins

Ingredients:

  • 2/3 cup caster sugar
  • zest and juice of 1 lemon
  • 2 cups plain flour
  • 2 tsp baking powder
  • ¼ tsp bicarb. soda
  • ¼ tsp salt
  • 115g unsalted butter
  • ¾ cup sour cream
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 tbsp poppyseeds
Lemon Icing
  • 1-2 tbsp lemon juice
  • approx. 2/3 cup icing sugar

Method:

Preheat your oven to 200*C and line a muffin tin with paper cases.

Melt the butter and leave to cool. Tip the sugar and lemon zest into a big mixing bowl and rub the two together with your fingertips.

Sift the flour, baking powder, bicarb and salt into the bowl with the sugar, and mix.

In a separate bowl, whisk together the butter, eggs, sour cream, lemon juice and vanilla.

Fold the wet ingredients into the dry, until just combined. Finally, add the poppyseeds. Don’t overmix!

Distribute the muffin batter among the paper cases and bake for around 20 minutes, until golden brown on top.

Mix together the icing sugar and extra lemon juice until you get a thick icing. Drizzle over the cooled muffins to serve.
