apple + blackberry crumble

We had friends from Australia come to visit a little while ago. They were passing through Yorkshire on their way to Scotland, but had time to see the sights and have dinner at our place.

Q. What do you serve for dinner to visiting Aussies?

Dessert came down to me, so Mum and I brainstormed for something typically British and minimal effort… but the best we could come up with was some kind of jam-sponge-hot-pudding-thing! It was the Boyfriend who came to the rescue with the idea for a crumble. Making the most of berry season, we managed to pick all the blackberries ourselves on a walk round the back lanes of the village. Add in a few apples, cinnamon and a shortbread-style topping, and you’ve got the ultimate no-fuss dessert to impress houseguests from across the pond 😉

Ingredients:

Crumble:

  • 120g plain flour
  • 50g caster sugar
  • 60g cold, unsalted butter

Filling:

  • 3 Braeburn apples – approx. 300g 
  • 30g unsalted butter
  • 30g brown sugar
  • 115g blackberries
  • 0.25 tsp cinnamon

Method:

Preheat your oven to 160*C {fan-forced}. 
Measure out the flour and sugar for the crumble into a mixing bowl. Cut the butter into small chunks, and use your fingers to rub it into the flour and sugar until you get fine ‘breadcrumbs’. Tip the mix out onto a lined baking sheet and spread it out, then bake in the oven for 15 minutes until golden brown.
Peel and core the apples, and slice into rough 2cm cubes. Give the blackberries a quick rinse. 
Melt the butter and sugar for the filling in a saucepan on a medium heat. Keep stirring so it doesn’t burn and cook for 3 minutes or so. 
Add the apple and cook for 5 minutes; then add the blackberries and the cinnamon. Cook for 3 minutes more.
Take off the heat and cover with a lid, and let it sit for 2-3 minutes more. Tip the fruit into an ovenproof dish and top with the crumble mix. Reheat in the oven for 5-10 minutes, and serve with cream, ice cream, custard… whatever you like!
