cinnamon sugar muffins {with nutella middles}

Ah January. The Monday of months. It’s not been the kindest. My exams are finally out of the way but house-hunting is currently taking up a lot of mental space. I’m hoping that February is going to be much better for my stress levels!

So, let’s talk antidotes to stress. Nutella anyone? I have been known to eat it straight out of the jar with a spoon. No shame here.

This recipe got earmarked pretty quickly from the Sally’s Baking Addiction cookbook, which was a Christmas present. A spoonful of Nutella is baked into the centre of each cinnamon-and-nutmeg-spiced muffin, and they’re rolled in cinnamon sugar after baking. Whilst mine didn’t turn out to be the prettiest, they’re lovely and comforting, and especially good whilst still warm. My housemates definitely approved!

Ingredients:

The recipe just made 6, so I’d consider doubling/trebling it next time!

  • 75g butter {at room temperature}
  • 100g sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 120ml milk
  • 190g plain flour
  • 1.5 tsp baking powder
  • 0.5 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.5 tsp salt
  • 6 tsp Nutella {or another chocolate spread}

Cinnamon sugar:

  • 2 tbsp unsalted butter
  • 50g sugar
  • 1.5 tsp ground cinnamon

Method:

Preheat the oven to 220 degrees Celsius and grease a muffin tin with a little butter {alternatively, use paper cases}. 
Cream the butter and sugar together in a mixing bowl; add the egg, milk and vanilla and beat well. Gently fold the remaining dry ingredients {flour, baking powder, spices and salt} into the mixture and stir until just combined. It will be lumpy, but that’s fine. 
Put one heaping tablespoon of mixture into each of the muffin holes. Put a teaspoon of Nutella in the centre of each, and top with another tablespoon of muffin batter.
Put the tin into the oven and bake at 220 degrees for 5 minutes. Reduce the temperature to 180 degrees for another 15 minutes of baking, until the edges are starting to brown. Remove from the oven and let the muffins cool in the tin for 5 minutes. 
Melt the butter in a small bowl; mix the sugar and cinnamon together in a separate bowl. Dunk the top of each muffin in the melted butter and then in the cinnamon sugar. If you’ve missed any bits you can sprinkle more sugar on top with a spoon. 
Random, but these muffins really remind me of the cinnamon sugar doughnuts that McDonald’s used to make. Does anybody else remember those? Let me know what you think!
